I am not a Chef






"Hello everyone, I am James Tolin. I am a student at the Culinary Institute of America. I have been a food lover since the age of 12. I use to watch Food Network with my parents and dreamed of one day becoming a chef. I have been in the food industry for over five years and professionally for a four years. I understand I call myself a chef, but this is not to be taken in the professional manner. This is my own deception of chef. I believe a chef is a person who has a great love for food. A chef is also a person who can create from individual items; pick up 3 items, look deeply into them, and ask themselves "What can I do with this." A chef is an artist of another kind. They must work with sight, smell, touch, and even sound. The most important feature of all is that they must be able to make a combination of flavors that are so deeply palatable you close your eyes and fall into a deep trance of ecstasy and warmness inside. Our life has struggles that we have to over come, but one great chef has explained it perfectly for me and we should always remember this, 'We go through our careers and things happen to us.
